Tuna Mac Casserole

A few months ago I said I’d start sharing some Practical Diva recipes, but I’ve yet to make good on that promise. So today, here is yummy, cheap, tuna macaroni casserole!

Time:
30 minutes prep, 30 minutes in oven.

Ingredients:
1 can of white tuna (drained)
2 cups dry macaroni (shells work too)
1 medium onion, finely chopped
1.5 cups of cheese, grated (my fave is white cheddar)
3/4 cup of mayo
2.5 cups of veggies- broccoli, peas, carrots
corn flakes, crushed on top

Directions:
Boil macaroni as per package instructions.
Saute the onions, do not brown.
I like the throw the veggies into the boiling water with the mac for the last two minutes.
Drain, and pour mac and veggies back into the pot.
Mix in the mayo, tuna, onion and cheese.
Spread into a buttered 8×11 baking dish.
Cook at 350 for 30 minutes.
Crumble the corn flakes on top for the last 5 minutes.
Enjoy!

This meal provides four satisfying servings. We love having the leftovers for lunch!
